Ingredients

  • 1 tbsp unflavored gelatin powder
  • 2-3 tbsp cold water (for blooming)
  • 1 cup hot water (about 75°C, not boiling)
  • 1/2 lemon, juiced
  • 1/2 cup cold water or unsweetened cranberry juice
  • 1 pinch Himalayan pink salt (optional)
  • 1 tsp raw honey (optional)

Equipment

  • mixing bowl or glass
  • whisk or spoon
  • measuring spoons
  • measuring cup
  • silicone molds (optional) for cube version

Method

  1. Sprinkle the gelatin over cold water and let it sit for 3–5 minutes until it becomes spongy.
  2. Pour hot water over the bloomed gelatin and whisk for 30–45 seconds until fully dissolved and clear.
  3. Add the cold water or cranberry juice and stir to bring the mixture to a drinkable temperature.
  4. Stir in the lemon juice, optional salt, and honey. Mix well to combine flavors.
  5. Drink slowly 15–20 minutes before your main meal. Optionally, pour into molds and refrigerate to make cubes.

Notes

  • Always use unflavored gelatin — NOT flavored Jell-O mixes which contain added sugars.
  • Never use boiling water — temperatures above 85C prevent proper gel formation.
  • For the pink version: replace cold water with hibiscus tea or cranberry juice.
  • Weekly batch: multiply by 4, pour into 8x8 dish. Stores 7 days refrigerated.
